NADIM HAMZE

MANAGING DIRECTOR / HEAD OF CULINARY

Nadim has always loved culinary arts, once finished high school he decided to pursue what he was naturally gifted at, he enrolled in the High Institute of Hospitality and Management in Lebanon graduating with a degree in culinary arts. He worked in many fine restaurants across the country including five stars hotels until he decided to move to Hong Kong where his life was about to change forever. Armed with determination and passion, in 2010 Nadim opened Sumac Restaurant offering guests his innovative interpretation of Lebanese and Mediterranean cuisine continuously striving to build upon his vision of providing exemplary dishes and a comprehensive guest experience.

“I made a promise to myself that I would provide the best experience to my guests through my knowledge, experience, and passion in all the dishes offered from our side.”   

A passionate executive chef with 25 years experience in five stars hotels across Egypt and the Gulf countries, and a possessed talent for taste and the skill of integrating and presenting traditional Lebanese dishes with modern Lebanese identity and presentation to loft the guests’ experience.   

Ahmed earned the first place in the culinary arts competition by Emaar Dubai Hospitality Group and the golden pin in 2019 as a professional member of the Egyptian Association of Professional Chefs.

“I love the challenge of cooking for folks who’ve made a commitment to eat for their health.  I believe that is the most earnest motivation for exercising creativity in the kitchen given that Lebanese cuisine is one of the healthiest diets in the world.”

A Lebanese Chef, grew up in Bekaa Valley, home to Lebanese cuisine and wineries, worked for famous hotels in Dubai and Maldives. He worked in various restaurants with different awards, such as Michelin Star and best Lebanese Restaurant in Dubai. He is now bringing the most traditional and authentic Lebanese flavours to Sumac.
